The Authentic Bilona Process
1.Ethical Milking of Desi Gir Cows:
Step 1: The Foundation.
Everything begins with free-grazing, purebred Gir cows. The highly nutritious A2 milk is harvested ethically only after the calves are fully fed.
2.Traditional Curdling:
Step 2: Culturing the Milk.
Instead of using industrial cream-separation, the fresh A2 milk is boiled, allowed to cool, and naturally cultured into whole curd overnight in a pristine environment.
3.Vedic Bilona Churning:
Step 3: Wooden Churning.
The cultured curd is bidirectionally churned using a traditional wooden churner (Bilona) to separate the premium, probiotic-rich white butter (Makhan) from the buttermilk.
4.Slow Flame Melting:
Step 4: Clarifying.
The hand-gathered white butter is slowly melted over a patient, low-heat flame. This slow-clarifying method allows the milk solids to separate completely, leaving behind a flawless, golden elixir.
